Recipe: Basic Béchamel Sauce

I have been writing a cookbook since 2005’ish.  It has only really ever been for me, but I’ve had some friends ask for recipes.  Here is a scanned page from the book.  I hope that it’s enjoyable!

PS. This recipe is a great sauce for gnocci or pasta, and a blue cheese is fantastic in the place of the gouda…it can also be adapted to make a very yummy Cheddar based chile con queso!
