Winter is soup time! Adventures in cooking have brought me to an appreciation for the versatility of legumes. (especially lentils!) This lentil soup, with it’s warming spices, is ideal for a cold night after a long day at work or play. My favorite part is the moment when all of the spices blend together, dissolve fully, and the soup becomes a light shade of green.
If you like meat, marinate and grill some tender pieces of lamb or chicken. Add them to the soup during the final 15 minutes of cooking.
